People ask me all the time how I make quick, healthy food that everyone likes. For me, it’s about keeping it super simple! This is one of my favorite go-to recipes. Enjoy!!
Nora’s Harvest Skillet 🍳
Cast Iron Pan
1 Tbsp coconut oil
1/2 sliced red onion
1/2 bell pepper (any color) diced
5-6 potatoes, cubed
1 zucchini, diced
1 yellow squash, diced
4 eggs (I like farm eggs if you can get them!)
Salt and pepper
Salsa or guacamole for topping up if you want
Serves 3-4… or 2 if you are like my husband and I and snack on it all night 🙂
Heat up your cast iron pan and oil on medium high. Sauté onion and bell pepper for 2-4 mins. Add potatoes. Add salt and pepper to taste. Cover and continue cooking for about 10-15 mins, stirring occasionally. Add zucchini and squash. Cook another 5-10 mins, covered, stirring occasionally. When potatoes are tender and cooked through, crack 4 eggs on top, leaving room in between each one. Cover with a lid, but Stay close by… once eggs have reached desired “doneness”, pull the pan off the burner and serve. SO GOOD.
